Waffles

Everyone knows waffles are a treat! The carb loading and the endless toppings are something to dream about!

Ingredients

1 1/2 cups flour
1 1/2 Tablespoons baking powder
1/8 teaspoon salt
3 Tablespoon Coconut sugar

2 1/2 Tablespoons lemon juice
1 teaspoon vanilla extract
3 Tablespoons coconut oil
1 cup of almond milk

Directions

1. Mix the dry ingredients together in a mixing bowl. In another bowl, combine the liquid ingredients. The milk with "curdle" with the lemon juice.

2. Combine the dry and liquid ingredients thoroughly and let sit.

3. Heat up the waffle maker and cook the "dough" per the waffle maker instructions.

4. Top waffles with whatever you like! I use peanut butter and maple syrup.

Aeble skiver

This recipe is a danish dessert, however its good as breakfast as u can fill it with anything... for it to turn out the way my family makes them... you will need a special cast iron pan that is well seasoned... the pan cost about 30 bucks and could also be used to make cake pops...

For this recipe you need:
Regular pancake mix, prepared by instructions on box
Apple sauce or anything like nutella, peanut butter, or jam
Cinnamon and sugar for the apple sauce
Powdered sugar for nutella ones

Directions
Season the pan with oil.... this is by dipping a paper towel in veg oil and coat the pan to entirety
Place the pan in the oven and heat the oven to 350 degrees
Prepare the pancake mix
Once the oven is preheated take out the pan and season it again
Place one tablespoon of pancake mix in each section
Set 1/2 tablespoon of applesauce in each... dont let it touch the sides
Set another tablespoon of pancake mix
Cook in the oven for about 20 min...
Once golden brown, take a spoon and carefully spoon out the skiver, run it along the edge to detach any stuck
Then coat with cinnamon and sugar
Repeat till mix is gone, remember to rub veg oil before and after each batch...

Oatmeal Banana Nut Muffins

Like I had said in the request blog, I made this my own looking at basic muffin recipes of any kind. Goe is not home yet, but I am sure he will love these! These are no sugar added, but remember that just means that the applesauce and bananas have sugar naturally...
Ingredients:
1 1/2 cups flour
1 cup of quick oats
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/4 cup soy milk
1/3 cup applesauce
1/2 teaspoon vanilla extract
3 bananas, mashed
1/2 cup english walnuts, finely chopped
Directions:
1. Combine flour, oats, baking powder, baking soda, salt and nuts
2. In a separate large bowl, mix the milk, applesauce, vanilla, and egg.
3. Add mashed bananas to the wet mixture and stir the flour mixture until all combined.
4. Spray Canola onto the muffin pan or line with paper cups.
5. Divide the batter filling each cup, 2/3rds of the way.
6. Bake for 18-20 minutes at 400 degrees

Pumpkin Cranberry Nut Muffins

This set of muffins makes 12 muffins and delicious...

Ingredients:
Dry:
       2/3 cup quick oats
       1 1/4 cups flour
       2 Tsp baking powder
       1/2 cup sugar
       1/4 Tsp cinnamon
       1/4 Tsp nutmeg
       1/2 Tsp salt
       1 Tsp non-fat dry milk
       1/2 cup chopped pecans
Wet:
       3/4 cup soy milk (you can use any kind of milk)
       1 Tsp vanilla
       1 Egg beaten with 1 Tsp. vegetable oil (can use 2 egg whites)
       1/4 cup butter melted
       1/2 cup dried cranberries
       1/2 can of canned pumpkin

Directions :
1. Preheat over to 400 degrees F. grease or paper line medium muffin pan
2. In large bowl, combine all the dry ingredients. Mix well.
3. In medium bowl, combine all wet ingredients. Mix well.
4. Combine dry and wet ingredients only to moisten, but let the batter be lumpy.
5. Spoon into muffin pan
6. Bake for 20 to 25 minutes.
7. Remove from pan and cool on rack

zucchini carrot muffins

2cups all-purpose flour
1cup quick-cooking or old-fashioned oats
3/4cup packed brown sugar
3teaspoons baking powder
1/2teaspoon cinnamon
1/4teaspoon salt
2/3cup fat-free (skim) milk
3tablespoons canola or soybean oil
2egg whites, 1/4 cup fat-free cholesterol-free egg product or 1 egg
1cup finely shredded carrots (1 1/2 medium)
1/2cup shredded unpeeled zucchini (1 small)

Heat oven to 400°. Spray 12 medium muffin cups, 2 1/2x1 1/4 inches, with cooking spray, or line with paper baking cups and spray paper cups with cooking spray.

Mix flour, oats, brown sugar, baking powder, cinnamon and salt in large bowl. Stir in milk, oil and egg whites all at once just until flour is moistened. Fold in carrots and zucchini. Divide batter evenly among muffin cups.

Bake 15 to 20 minutes or until golden brown and toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.















Veggie fried rice

Let's just say life has gotten busy. Fried rice! Ingredients 1/4 package of tofu, cubed 2 tablespoons of diced onion 1 clove of gar...
