Spinach turnovers

Ingredients

1 package of frozen spinach, thawed and drained well

2 tablespoons pine nuts

1 cup  finely chopped onion

1 container of refrigerated biscuits * you can purchase accidentally vegan

Salt and pepper to taste

Oven is needed to 400 degrees for this recipe.

Directions
First, in a small pan and a lil oil, toast pine nuts and onion for 5 min or until nuts are slightly browning. Fold the onion nut mix  with the spinach. Separate the biscuit dough and place one biscuit between two pieces of wax paper. Using a rolling pin, roll the biscuit to a diameter of 4 to 5 inches. Carefully remove the top wax paper from the dough. Add a heaping tablespoon of spinach slightly un centered on the dough. Fold the dough over the spinach and pinch the edges shut with a fork. Place the shut turnover on an ungreased cookie sheet. Repeat until you are out of biscuit dough. Place the cookie sheet in the oven and cook 8 to 10 min. 


These turnovers can be eaten ASAP or room temp or cold. Enjoy.

Easy no hassle snack pb banana chard wrap

Three simple ingredients:
One leaf of chard
One medium banana
One tablespoon of natural organic peanut butter

Directions:
Lay out the chard and cut off the stalk. Trim the vein to your preference. Mine was 1/4 in think.
Place the banana in the middle of the leaf, with the banana parallel to the large vein.
Smooth the peanut butter up and down the banana until covered.
Wrap up the banana with the chard like you would a burrito.
Voila your wrap is done and you can chow down.

Oreo Instant pudding with soymilk

This is a recipe that isn't a recipe but a rewrite to the instructions to make it with soymilk. If you try to use soy milk as it says for just milk then you end up with something that will not set and it is rather gross. I wanted pudding because I had all 4 wisdom teeth removed and milk isn't my friend all the time.

I used:
1 ¾ cup vanilla soymilk
1 box oreo cookies n creme jello pudding

What I did:
Cook the soymilk to rapid boil.
Take off heat and whisk the packet of pudding till combined
Pour into 4 separate cups/dishes and cool until sets
top with whipped cream and serve!!!

Banana Cake Balls

These are delicious!

Ingredients:
1/2 cup soy milk (you can use cow's milk)
1 package banana cream JELLO pudding
2 small ripe bananas, mashed
1 package 1-lb frozen pound cake, thawed, and crumbled
3 (4.4 oz.) milk chocolate bars, chopped
sprinkles that are desired

Directions:
Stir pudding mix and milk together.
Add the banana and crumbled cake, mix well
Shape into one inch balls, place on wax paper
Freeze them for an hour
Melt the chocolate and dip the balls in the chocolate
Return them to cookie sheet
Immediately add sprinkles
Let stand then enjoy!!

Oatmeal Banana Nut Muffins

Like I had said in the request blog, I made this my own looking at basic muffin recipes of any kind. Goe is not home yet, but I am sure he will love these! These are no sugar added, but remember that just means that the applesauce and bananas have sugar naturally...
Ingredients:
1 1/2 cups flour
1 cup of quick oats
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/4 cup soy milk
1/3 cup applesauce
1/2 teaspoon vanilla extract
3 bananas, mashed
1/2 cup english walnuts, finely chopped
Directions:
1. Combine flour, oats, baking powder, baking soda, salt and nuts
2. In a separate large bowl, mix the milk, applesauce, vanilla, and egg.
3. Add mashed bananas to the wet mixture and stir the flour mixture until all combined.
4. Spray Canola onto the muffin pan or line with paper cups.
5. Divide the batter filling each cup, 2/3rds of the way.
6. Bake for 18-20 minutes at 400 degrees

Pumpkin Cranberry Nut Muffins

This set of muffins makes 12 muffins and delicious...

Ingredients:
Dry:
       2/3 cup quick oats
       1 1/4 cups flour
       2 Tsp baking powder
       1/2 cup sugar
       1/4 Tsp cinnamon
       1/4 Tsp nutmeg
       1/2 Tsp salt
       1 Tsp non-fat dry milk
       1/2 cup chopped pecans
Wet:
       3/4 cup soy milk (you can use any kind of milk)
       1 Tsp vanilla
       1 Egg beaten with 1 Tsp. vegetable oil (can use 2 egg whites)
       1/4 cup butter melted
       1/2 cup dried cranberries
       1/2 can of canned pumpkin

Directions :
1. Preheat over to 400 degrees F. grease or paper line medium muffin pan
2. In large bowl, combine all the dry ingredients. Mix well.
3. In medium bowl, combine all wet ingredients. Mix well.
4. Combine dry and wet ingredients only to moisten, but let the batter be lumpy.
5. Spoon into muffin pan
6. Bake for 20 to 25 minutes.
7. Remove from pan and cool on rack

zucchini carrot muffins

2cups all-purpose flour
1cup quick-cooking or old-fashioned oats
3/4cup packed brown sugar
3teaspoons baking powder
1/2teaspoon cinnamon
1/4teaspoon salt
2/3cup fat-free (skim) milk
3tablespoons canola or soybean oil
2egg whites, 1/4 cup fat-free cholesterol-free egg product or 1 egg
1cup finely shredded carrots (1 1/2 medium)
1/2cup shredded unpeeled zucchini (1 small)

Heat oven to 400°. Spray 12 medium muffin cups, 2 1/2x1 1/4 inches, with cooking spray, or line with paper baking cups and spray paper cups with cooking spray.

Mix flour, oats, brown sugar, baking powder, cinnamon and salt in large bowl. Stir in milk, oil and egg whites all at once just until flour is moistened. Fold in carrots and zucchini. Divide batter evenly among muffin cups.

Bake 15 to 20 minutes or until golden brown and toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.

Green bean fries

This recipe was tried because I was in the mood for these and the only place I could find then is a restaurant. If u like or dislike green beans, I believe you will fall in love with this!

Ingredients
1lb fresh green beans
1 teaspoon of garlic powder
1 teaspoon of black pepper
3 teaspoons of salt
2 cups of flour
1 cup of buttermilk
And at most a quart of vegetable oil for frying

Directions
1. Heat oil to 350 in a fryer or large saucepan
2. Whisk the garlic, pepper, salt, and flour in a large bowl
3. Pour the buttermilk in a shallow dish
4. Doing 5 green beans at a time, dip them in the buttermilk until it is covered. Then transfer to the flour mix. Coat the green beans and shake the excess off.
5. Place the beans in the heated oil until golden brown (this is about 4 min)
6. Put the beans on a paper towel covered plate. Serve. And enjoy!
