Hard Candy

My older sister was wanting candy diamonds for her cupcakes this Saturday. With the three day notice, it was impossible to order this late in the game... After searching for them at all the bakeries in the area and coming up dry, a search a Michaels and Party City brought the idea of making them from home... I found a recipe calling for isomalt, which is a sugar substitute and create absolute clear candy gems. Isomalt is another thing that is hard to find in late night searches... Sooo, after another search for hard candy from real sugar we found one!!! This is recipe allows you to create any almost clear gems with a gem candy mold you can get at any craft store...

This is what you will need:
2 cups sugar
2/3 cup corn syurp
3/4 cup water
a glass measuring cup (holding four cups)
a candy thermometer
foil
candy molds able to handle 275 degrees

What to do...
1. Grease everything, this will let it be easier to get it off to clean it. And place foil underneath everything... 
2. Mix the sugar, syurp and water in the pan until combined evenly and the wanted food coloring
3. Boil the sugar with constant stirring till 275 degrees
4. Immediately take the thermometer out and pour the sugar in the glass measuring cup to get it easy to pour
5. Pour asap into molds
6. let fully cool and pop them out of molds

remember not to over fill molds, this will make it shards instead of gems...

Tortellini Chicken Soup

With me being sick, soup to me is good medicine. I thought why not share this delicious soup.

For this recipe you will need:
9 ounces of three-cheese wheat tortellini
29 ounces of low sodium chicken broth
a jar of light alfredo sauce or 3 cups of my homemade alfredo
2 cups of shredded cooked chicken
1/3 cups of sun-dried tomato strips
3 handfuls of baby spinach
1 cup mushrooms cut in small bitefuls

The steps:
1. cook the tortellini how the directions tell you, drain and set aside
2. combine the broth and alfredo, add chicken, mushrooms, and dried tomatoes, stir
3. bring to a boil, reduce heat and simmer uncovered for 5 minutes
4. add tortellini and spinach, cook for 1-3 minutes until it is heated through and spinach is slightly wilted...

Enjoy this meal, you can add any veggie you love and have fun spending time with those you love!!

Turkey burger

this recipe can be tweaked to your liking....
you will need:
1 small zuchini finely shredded
1/2 red onion chopped, fine
1/2 red pepper
1 tbs.garlic pepper
1/8 cup mustard
1 seeded jalpeno, chopped fine
1 lb ground turkey
mix all these together with hands until fully combined
shape into the size of burger you wish and cook on skillet, flip occassionally until internal reads 165 degrees...
now you can make ur burger i added the burger to a wheat bun.
munseter cheese, tomato, lettuce, and bacon

chicken salad pasta

i was in the mood for chicken salad but did not have mayo or bread or tortilla wraps.
this recipe contains:
1 apple
2 celery stalk
1 large carrot
8 baby tomatoes, halved
1 large chicken breast, cooked and cut up into bite size pieces
1/2 package of pasta
2 tbspn honey mustard

chop each veggie up and cook pasta
mix everything together veggies, pasta, chicken, and mustard
