B.PB.C. Oatmeal cookies

I was in the mood for chocolate and peanut butter. I didn't really want to break out the flour and sugar, I wanted something quick and easy. So I came up with this. My mom helped with asking about putting baking powder in it.

This recipe is good for you and quick and easy. You don't need flour or sugar but it is sweet already. This recipe you will need :
1 cup quick oats
2 ripe bananas
1/4 tsp baking powder
1 Tbs  peanut butter
Chocolate chips (as many as you'd like)

What you get to do:
1. Mash bananas ( I do this while they are still in the peel, just enough to make them mushy)
2. Mix everything together!
3. Spoon 1 tbs  for each cookie on a sprayed cookie sheet.
4. Bake at 350 for 15 min
5. Enjoy with friends and family.

Makes over a dozen!!!!!

Like-Strawberry Shortcake cupcakes

This set of cupcakes was a very tasty test, and exciting. You will need:

2 cups cake flour (if you do not have cake flour you can use two cups all purpose flour minus 6 tablespoons of the flour but add 6 tablespoons of cornstarch)
1 1/2 cups sugar
2 teaspoons baking powder
1 cup milk, scalded (this is heating the milk to 180 degrees) I used a candy thermometer
4 egg whites
Strawberry preserve
Cool whip
Oven heated to 325 degrees

What you need to do with the ingredients:

1. Sift flour, sugar, and baking powder three times
2. Pour scalding milk slowly into the flour mix
3. Beat egg whites until you reach soft peaks
4. Gently fold the whites into the batter.
5. Gently pour the batter into cupcake pan lined
6. Cook for 15 min until golden brown
7. Allow to cool to room temperature
8. Pull out the middle of the cupcake with a corer
9. Add strawberry preserves to new empty core
10. Top with cool whip
