Banana Cake Balls

These are delicious!

Ingredients:
1/2 cup soy milk (you can use cow's milk)
1 package banana cream JELLO pudding
2 small ripe bananas, mashed
1 package 1-lb frozen pound cake, thawed, and crumbled
3 (4.4 oz.) milk chocolate bars, chopped
sprinkles that are desired

Directions:
Stir pudding mix and milk together.
Add the banana and crumbled cake, mix well
Shape into one inch balls, place on wax paper
Freeze them for an hour
Melt the chocolate and dip the balls in the chocolate
Return them to cookie sheet
Immediately add sprinkles
Let stand then enjoy!!



Homemade Hot Pocket

Ingredient:
1 package of pastry puff sheets
any type of meat... I picked chicken (cooked)
any type of cheese... I picked shredded Italian Mix
any vegetable... I picked mushroom and broccoli
1 egg

Directions:
Have the the vegetables chopped up in pieces the smaller the better.
Thaw the pastry puff according to package (mine said 40 min)
Roll the pastry puff to 1/4 in or smaller, be careful not to make it too thin or it will tear
Cut the sheets to be 3 in by 5in.
Place one rectangle of pastry on a cooking sheet
Make the egg wash (one egg scrambled)
Brush the edges of the pastry with the egg wash
Place the filling in the middle to how much you want and how much will fit
Then place another pastry sheet on top pushing the edges together with your fingers
Take a fork and press the edges again
Brush the egg wash over the top and cut two slits 1/2 in with a knife.
Repeat till you have how many you want

Preheat the oven to 375 degrees
cook for 20-30 min rotating at the half time mark to prevent sticking to the pan

Crockpot chili :)

This is my first recipe for my own chili... I love it and Goe enjoyed it. I will make more.... choose as much of each ingredient to ur flavor buds

Ingredients
Beef
Okra
A can of diced tomatoes
Sweet chili sauce (that Asian red bottle with a green top)
Corn
Beef stock
Red chili beans (one can)
Kidney beans (one can)
Garlic

Directions
Cook the ground beef
Dump all ingredients and cook for 4 hours

Oatmeal Banana Nut Muffins

Like I had said in the request blog, I made this my own looking at basic muffin recipes of any kind. Goe is not home yet, but I am sure he will love these! These are no sugar added, but remember that just means that the applesauce and bananas have sugar naturally...
Ingredients:
1 1/2 cups flour
1 cup of quick oats
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/4 cup soy milk
1/3 cup applesauce
1/2 teaspoon vanilla extract
3 bananas, mashed
1/2 cup english walnuts, finely chopped
Directions:
1. Combine flour, oats, baking powder, baking soda, salt and nuts
2. In a separate large bowl, mix the milk, applesauce, vanilla, and egg.
3. Add mashed bananas to the wet mixture and stir the flour mixture until all combined.
4. Spray Canola onto the muffin pan or line with paper cups.
5. Divide the batter filling each cup, 2/3rds of the way.
6. Bake for 18-20 minutes at 400 degrees

Requests

Hi everyone!
         This is a post to ask you guys what you like and would like to have a certain recipe or have my own spin on something. I will take any suggestions... I am thinking about doing a theme each month and with today being the first of December, I'd like to start this in January, a whole new year a whole new blog setup. I can also start making videos if you think that would help your quest through new and old foods. My last two blogs have been over muffins. Both are delish but the carrot one went over better. My next blog should be banana muffins, because Goe requested I am attempting to make healthy options for Goe and I, so we don't add so much weight... like we have these passed months. Let's say I'll be your guinea pig for food... To submit your requests just leave a comment and I will see what I can do.

Pumpkin Cranberry Nut Muffins

This set of muffins makes 12 muffins and delicious...

Ingredients:
Dry:
       2/3 cup quick oats
       1 1/4 cups flour
       2 Tsp baking powder
       1/2 cup sugar
       1/4 Tsp cinnamon
       1/4 Tsp nutmeg
       1/2 Tsp salt
       1 Tsp non-fat dry milk
       1/2 cup chopped pecans
Wet:
       3/4 cup soy milk (you can use any kind of milk)
       1 Tsp vanilla
       1 Egg beaten with 1 Tsp. vegetable oil (can use 2 egg whites)
       1/4 cup butter melted
       1/2 cup dried cranberries
       1/2 can of canned pumpkin

Directions :
1. Preheat over to 400 degrees F. grease or paper line medium muffin pan
2. In large bowl, combine all the dry ingredients. Mix well.
3. In medium bowl, combine all wet ingredients. Mix well.
4. Combine dry and wet ingredients only to moisten, but let the batter be lumpy.
5. Spoon into muffin pan
6. Bake for 20 to 25 minutes.
7. Remove from pan and cool on rack

zucchini carrot muffins

2cups all-purpose flour
1cup quick-cooking or old-fashioned oats
3/4cup packed brown sugar
3teaspoons baking powder
1/2teaspoon cinnamon
1/4teaspoon salt
2/3cup fat-free (skim) milk
3tablespoons canola or soybean oil
2egg whites, 1/4 cup fat-free cholesterol-free egg product or 1 egg
1cup finely shredded carrots (1 1/2 medium)
1/2cup shredded unpeeled zucchini (1 small)

Heat oven to 400°. Spray 12 medium muffin cups, 2 1/2x1 1/4 inches, with cooking spray, or line with paper baking cups and spray paper cups with cooking spray.

Mix flour, oats, brown sugar, baking powder, cinnamon and salt in large bowl. Stir in milk, oil and egg whites all at once just until flour is moistened. Fold in carrots and zucchini. Divide batter evenly among muffin cups.

Bake 15 to 20 minutes or until golden brown and toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.
